Roast Chicken Fajitas

Skinless boneless chicken breasts

avocado oil

lime juice

chilli powder

ground cumin

2 large onion, cut into wedges

2 large peppers, cut into wedges

salt & pepper

spinach

salsa

avocado

plain high protein greek yogurt or sour cream

cheese

(optional tortillas)


Preheat the oven to 400. Cut up chicken and add oil, lime juice, chilli powder and cumin.


In a large baking pan, stir together onions and peppers. Add oil and salt and pepper, mix with chicken.


Roast, uncovered for about 20 minutes, stirring once or twice, until the chicken is no longer pink inside and vegetables are tender.


Serve with desired toppings!
