Quinoa Chili

1 tablespoon extra virgin olive oil or butter

  • 1 large onion, diced

  • 1 large red bell pepper, diced

  • 4 cloves garlic, minced

  • 2 (14.5 oz) cans diced tomato (fire roasted optional)

  • 1 cup cooked quinoa (in chicken broth or water)

  • 1 (7 oz) can diced green chiles

  • 2 tablespoons chili powder

  • 2 teaspoons paprika

  • a couple dashes of hot sauce

  • salt and pepper

  • 1 (15 ounce) can mixed beans, drained and rinsed

  • 1 (15 ounce) can black beans, drained and rinsed

Fry onions, peppers and garlic slowly. Add in other ingredients and put in a crock pot for four hours or until ready!
