Quinoa Chili
1 tablespoon extra virgin olive oil or butter
1 large onion, diced
1 large red bell pepper, diced
4 cloves garlic, minced
2 (14.5 oz) cans diced tomato (fire roasted optional)
1 cup cooked quinoa (in chicken broth or water)
1 (7 oz) can diced green chiles
2 tablespoons chili powder
2 teaspoons paprika
a couple dashes of hot sauce
salt and pepper
1 (15 ounce) can mixed beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
Fry onions, peppers and garlic slowly. Add in other ingredients and put in a crock pot for four hours or until ready!
