Healthy Winter Fajita & Quinoa Soup
1/2 cup quinoa uncooked
3 bell peppers chopped
1 onion
3 garlic cloves
6 cups vegetable broth
juice of 1 lime
1 can diced tomatoes
1 can black beans
2 cups baby kale
1 tbsp chili powder
1 tbsp cumin
1/2 tbsp turmeric
2 tsp paprika
2 tsp. sea salt
1 tbsp coconut oil
Fry onion, peppers and garlic in coconut oil. Add spices. Add everything to a crock pot and cook on low 6 hours.
Optional - Top with cilantro, avocado or shredded cheese
